Cook gently until the edges set, then finish under the broiler until the center is cooked and the top is lightly golden. 

Slice into wedges and serve warm or at room temperature for breakfast, brunch, or an easy dinner.

  • 8 large eggs
  • ½ pound turkey sausage, casings removed if necessary
  • 2 cups fresh spinach, roughly chopped
  • ½ cup shredded cheddar cheese

Instructions

1. Prepare the turkey sausage

2. Cook the turkey sausage

3. Sauté the onion and garlic

4. Wilt the spinach

Tip

Bake or pan-sear until browned and cooked through, then simmer them briefly in your favorite marinara sauce. 

Serve over spaghetti, tuck them into toasted rolls, or offer them as an appetizer with toothpicks. 

They’re versatile, freezer-friendly, and guaranteed to disappear faster than you expect.

Bring the sauce to a gentle simmer over medium-low heat. These browned bits add extra savory flavor and help make the sauce taste as though it has been cooking much longer.

5. Simmer the meatballs in the sauce

Return the meatballs to the skillet, nestling them into the marinara sauce. Cover partially and simmer gently for 10–15 minutes, turning the meatballs occasionally so they cook evenly. Check the center of the largest meatball with a food thermometer; ground turkey sausage must reach an internal temperature of 165°F (74°C) before serving.

6. Arrange the meatballs for serving

Transfer the cooked meatballs to a shallow serving bowl and spoon the warm marinara sauce around them. Arrange them naturally so the browned surfaces remain visible rather than completely covering them with sauce. This creates an inviting presentation while keeping each meatball moist and flavorful.

7. Add the finishing touches
